Biltong or Droëwors: Which High-Protein Snack Should You Choose?

You want a proper savoury snack. Something packed with protein, full of flavour and satisfying enough to stop you raiding the cupboard again 20 minutes later.

That leaves two Southern African favourites fighting for a place in your snack drawer: biltong and droëwors.

They are both slow-dried meat snacks. They are both portable. And they can both deliver plenty of protein. But they are not the same.

Biltong is the better choice when you want lean, steak-like pieces of beef with a tender chew. Droëwors is made for people who prefer a richer dried-sausage flavour and a firmer bite.

Here is how to choose the right one for you.

Let’s break it down properly.

What is Biltong?

Biltong is made from whole cuts of beef.

The meat is seasoned, cured and slowly dried before being sliced into tender, flavour-packed pieces. Because the original structure of the beef remains intact, good biltong feels more like eating concentrated steak than chewing through a thin strip of jerky.

At Aussie Biltong, we make our biltong using Australian grass-fed topside beef, real spices and traditional slow-drying methods.

No heat blasting. No unnecessary fillers. No shortcuts. Our beef is made properly with a rich savoury flavour.

New to the category? Our guide to what biltong is and how it is made explains why it tastes and feels so different from other dried-meat snacks.

What is Droëwors?

Droëwors means “dry sausage.”

Instead of using a whole cut of beef, droëwors is made from minced meat mixed with fat and spices. The mixture is placed inside a sausage casing and dried until it develops its characteristic firm bite.

That added fat is not an accident. It helps give droëwors its rich flavour and satisfying sausage texture.

Think of it this way:

Biltong is closer to sliced steak.

Droëwors is closer to a dried beef sausage.

Both are seriously savoury. They simply deliver the experience differently.

Which Has More Protein?

Here is the honest answer: it depends on the product.

Both biltong and droëwors can be protein-packed, but lean biltong will often provide more protein relative to its fat content.

Drying does not create extra protein. It removes water, making the nutrients already present in the meat more concentrated. In one study of droëwors, drying reduced total moisture by about 45%, with a corresponding increase in the concentration of the remaining components. This helps explain how a relatively small portion of dried meat can deliver a substantial amount of protein.

Droëwors also contains plenty of meat, but part of its weight comes from the fat needed to create the right sausage texture and flavour.

Our Aussie Original Beef Biltong delivers 25g of protein per serving, with zero added sugar and no artificial preservatives.

When comparing biltong and droëwors, do not get distracted by front-of-pack claims. Turn the packet around and compare:

  • Protein per 100g
  • Protein per serving
  • Total and saturated fat
  • Sugar and carbohydrates
  • Sodium
  • Actual serving size

Compare like for like. The numbers on the nutrition panel tell you far more than the name on the front.

Is Biltong Leaner than Droëwors?

Usually, yes.

Biltong made from trimmed topside beef can provide a leaner balance of protein and fat. Droëwors generally needs more fat to stop the sausage becoming dry, crumbly and short on flavour.

That does not mean droëwors is automatically a poor choice.

It means the two snacks suit different priorities.

Choose lean grass-fed beef biltong when you want straightforward protein without the texture of a sausage.

Choose droëwors when you want something richer, firmer and more indulgent. Simple.

Which is Better for Low-Carb Snacking?

Both can fit into a low-carbohydrate way of eating, but never assume every dried-meat snack is sugar-free.

Some commercial recipes use sugar, sauces or sweet marinades. Others rely on meat, salt, vinegar and spices.

Always check the ingredients.

A short, recognisable ingredient list is usually a good place to start when you’re searching for a high-protein snack with no added sugar.

Which One Should You Choose?

Choose biltong when you want:

  • A tender, steak-like bite
  • A potentially leaner protein snack
  • Whole-cut Australian beef
  • Something satisfying without a sausage casing
  • Clean, rich beef flavour

Choose droëwors when you want:

  • A firm dried-sausage texture
  • A richer mouthfeel
  • Traditional sausage seasoning
  • A snack that is easy to break into smaller pieces

Still stuck?

Try both using equal serving sizes.

Taste the biltong first and notice the soft, thick-cut beef texture. Then try the droëwors and compare its firmer casing, richer flavour and sausage-style bite.

There is no rule saying you must pick only one.

Biltong can be your everyday protein snack. Droëwors can be the richer option you reach for when the craving hits.

The Verdict

For a leaner, whole-cut protein snack, biltong takes the win.

For bold sausage flavour and a richer bite, droëwors earns its place.

The best choice depends on your taste, appetite and nutrition goals, but the product label should always have the final word.

Frequently Asked Questions

Is droëwors the same as biltong?

No. Biltong is made from whole cuts of cured, slow-dried meat. Droëwors is a dried sausage made from minced meat, fat and spices inside a casing.

Which has more protein: biltong or droëwors?

Both can be high in protein. Lean biltong often provides more protein relative to fat, but you should compare the nutrition panels of the specific products.

Is droëwors higher in fat?

It commonly is. Fat forms an important part of the sausage mixture and contributes to droëwors’ rich flavour and texture.

Is biltong suitable for low-carb eating?

It can be. Choose a product with low carbohydrates and no added sugar, and check the nutrition panel rather than relying on general category claims.

Which is better for an everyday work snack?

Biltong is often the more versatile everyday option when you want lean protein and a tender bite. Droëwors may suit you better when you want a richer, sausage-style snack.
